I made pizza again tonight from scratch... and I screwed up the recipe.

Ironically, I used 1 too few cups of flour for the dough. Despite that, it still kicked ass.

Just to make everyone else hungry, toppings were BBQ chicken, bacon and italian sausage. One pizza was "stuffed crust" (with cheese), the other was deep dish.

Afterwards, we had cake which my wife made (from scratch) to celebrate my daughter's birthday. Home made whipped cream frosting with sliced strawberries.

High hydration is not necessarily a negative for pizza dough. Up to ~68% (baker's %) has been used successfully.

how long did you smoke the chicken?

About 15 minutes. It was a single chicken breast though - oven broiled (along with the bacon - yes... I cooked the bacon in the oven!)

This thread is just like a weekend with my dad as the chef.

Did he call Domino's?

I kid, I kid!

The pizzas and your chosen toppings, the strawberries, crusty's steak and potatoes, and your somehow messing up one ingredient

Oh. Well... if it's any consolation, yesterday I made loaded nachos... from scratch? Okay, the tortilla chips were from costco, but I made my own queso sauce which rocked. I also make my own taco seasoning too. The refried beans were from a can though...

Why? Because I'm man enough to make my own pizza, which tastes 100% better than any store bought crap? Besides... it was a "meat lover's" style pizza. What's more manly than that!

Or is it because I screwed up the recipe?

I'm confused. 😕

I didn't make the cake. The cake wasn't a lie though... my wife made it. I was responsible for the pizza. 😕

1 cup of flour short, didn't the dough feel too wet/sticky? I guess if you made 2 pizzas you probably had a large amount. How many cups did you use? Like 6 of 7? Do you use a pizza stone or a pizza pan?

Yes, it did feel too sticky... but I'm no chef and hence I didn't know that meant lack of flour. I just thought it was a byproduct of me doubling my recipe, not the fact that I couldn't count to 4 (cups of flour).

How do you use 1 cup too little flour and still have dough? It would be paste and would be impossible to knead or roll out.

Easily. There were still 3 cups of flour in the dough. I made a double batch for two pizzas. It was a very "tender" crust due to having too little flour. As mentioned, it still kicked ass.
