I made Ceviche last night

I am hanging out with a few friends tonight, so I decided to prepare ceviche tacos.

(red snapper ceviche, shrimp ceviche <lemon/lime, onions, cilantro/parsley, jalepenos, garlic, cayenne> )

lemon caper sauce, sour cream, shreddded lettuce, avocados (I will cut and serve those there), flour tortillas

I had to do a few things after work so I didn't get started preparing all the ingredients till 9ish. Then, I didn't want to waste the fish bones, so I made a fish stock with a little miso in it. So I didn't sleep till really late.

Man, I am so tired right now. Literally, my eyes seem to just be shutting themselves. Plus, I didn't think about it, but the Ceviche may overcook in the brine since I prepared it last night and it is sitting in my refrigerator. :( What do you guys think I should do? Should I drain the brine when I get back home or should I just let it sit in the brine?

mmm... ceviche. There is this peruvian restaurant in Rockville, MD called "The Ceviche House" and they prepare this incredible ceviche with a special sauce on top. Best ceviche I have had in years (pretty much since I moved to the US)

Hmmm... I will drain it right when I get home. I was thinking of draining it this morning but I was late because of lack of sleep, so I just decided to leave it.

Have any of you guys made Ceviche before? I have, but I didn't brine it nearly this much.

The fish will have brine for about 16 hrs by the time I get home. :( I think that was a big mistake, but oh well, too late now.
