I am hanging out with a few friends tonight, so I decided to prepare ceviche tacos.
(red snapper ceviche, shrimp ceviche <lemon/lime, onions, cilantro/parsley, jalepenos, garlic, cayenne> )
lemon caper sauce, sour cream, shreddded lettuce, avocados (I will cut and serve those there), flour tortillas
I had to do a few things after work so I didn't get started preparing all the ingredients till 9ish. Then, I didn't want to waste the fish bones, so I made a fish stock with a little miso in it. So I didn't sleep till really late.
Man, I am so tired right now. Literally, my eyes seem to just be shutting themselves. Plus, I didn't think about it, but the Ceviche may overcook in the brine since I prepared it last night and it is sitting in my refrigerator.
What do you guys think I should do? Should I drain the brine when I get back home or should I just let it sit in the brine?
