I think it's more the reality of the fact that you can do something right 10 times and since it's expected people won't talk about it. Do something wrong once, and they'll tell all their friends.
on the severity of the transgression, the history of my patronage, etc.
if i go a place for the first time and its shitty, i won't go back.
if i've been there many times and had 1 bad experience, i probably will. though, it still depends.
i got food poisoning from a bbq place that i loved. a few months later, i ate there again. though it was never quite the same.
If it's a restaurant and the place is absolutely slammed and my order gets messed up or is a little late getting to me, it's not that big of a deal. I know how chaotic a kitchen can get when there's not a single table open and a waiting list backed up an hour or two.
But...if the place is otherwise calm and you screw up my order or it takes an unnecessarily long time to get my order I'm probably not coming back.
I usually give a business more than one chance, unless the transgression is so grievous that I can't forgive them and they make little to no effort to rectify the problem.
I think the mistake is very rarely the deciding factor for me. It's what is done to correct the mistake.
Situation 1-
Oh the salesperson lied to you and told you this? Oh we've confirmed that that's what the sales person said cause he didn't know? He says he's sorry. Let's see what we can do for you...
Business 1) Well that was our bad - We'll do full return/exchange/whatever it takes since we misadvertised/were mistaken about the product. Here's a gift card for your trouble. Sorry we called you a liar.
Business 2) Well, that sucks for you. It's just our policy and you have it in writing now, thank you for shopping here, see you soon biatch!
Needless to say one business would keep my business, the other wouldn't.
