I thought I would try and make some fried chicken breast cutlets (first time). I left them in a tad longer and it's a little browner than I wanted. It still tastes good. The kitchen is a mess though. I'm never deep frying in the house again. I think I'm going to go steam everything from now on.

If you made a mess frying it, you may have had the grease too hot. Try turning it down a little. Of course, the obvious step of covering it while it cooks shouldn't be left out, either. My wife bakes a lot of food. You can take boneless, skinless chicken breasts (or pork chops, etc) and bread them with a mix of bread crumbs, lemon-pepper, garlic salt, and whatever else strikes you as sounding good, put them on a pan and place them in the oven. It comes out tasting wonderful. It's also healthier for you than fried. This was a hard thing for me to accept, because I grew up on fried chicken.

try sticking the chicken in the oven or toaster oven. it takes about 45 minutes, but it cooks evenly, and there's generally no mess.

I baked me a grilled cheese samich for lunch, served with chilled ketchup.

It tasted pretty.

Say it with me, George Foreman.

Or buy one of those stove top classics kits, those things kick aCe. you throw all the stuff in the box in the pan then add chicken titties and pour on the sauce. like 45 minutes late you chow down. :D

I need you in my kitchen. :)

Sorry, my wife doesn't loan me out much. ;)

Seriously: cooking's not all that hard. Just get some good cookbooks and start trying things. Simple stuff at first and then harder stuff, just like any other skill.

I would highly recommend getting a copy of The Joy of Cooking. The recipes aren't what you might call "exciting", but it gives detailed info on a lot of basic and advanced cooking techniques (making your own fish or chicken stock for soups, for example). Use it as your "base" cookbook and then grab others that look interesting.

I lucked out and found a copy of that on cd when they closed our local Office Max a couple of years ago. It was marked $.99. I took it to the register and it rang up $.01.
