Manufacturers just put dates on most things so the grocery stores will continue to move inventory whether they sell the products or not.

It's a way they can guarantee that 6 months or a year later, they'll continue to have relatively constant demand.

My wife still doesn't get this, though I've explained it numerous times. :p

Once it's opened it must be refrigerated, I have never heard of anyone keeping an open jar of Mayo in a pantry. I'm pretty sure if you kept it in the pantry you'd feel shitty (no pun) if you used some after a few days.

Mayo doesn't actually have to be kept in a jar in the pantry, I just dump out the jar onto the counter top and take what I need each day. It's still good after two weeks.
