for us Canadians, peameal bacon > regular bacon.

peameal bacon is actually a sweet pickled pork loin and slices need to be fried. Chubbs can be baked.

looked up the peameal bacon, it looks delicious, not sure if I can find it here. Doesn't even seem to be available online.

Taylor Ham is the brand name for what is pork roll - something kind of just found in NJ. I personally have only tried the Taylor Ham brand but you can get it here https://jerseyporkroll.com/

Now a BLT. There is no substitute for bacon there.

Everyone has to try Taylor Ham as the meat in an egg and cheese sandwich before claiming bacon the king of the breakfast sandwich.
I prefer sausage. Ham and bacon can be present too, but if it doesn't have sausage, I'll pass.

Wild boar bacon, or that herbaceous pork - from the Spicoli pigs, that's what's up. Savory, decadent awesomeness.

I got a bacon sampler from Burgers once, it was glorious. The thick cut country bacon is what normal bacon should be. The cajun bacon steak was so good people were arm wrestling for the last of it.

Think I read somewhere the original BLT was made with jowl, which is even more fat than pork belly. Sounds a lot better than a 'pig face sandwich' though.

When I was a kid my parents had this weird period where they wanted us to eat liver. Probably big liver ran an add talking about how nutritious it was or something, no idea honestly. They served it a few times, it was truly awful. The last time they wrapped it in bacon. It successfully ruined the bacon but was still basically inedible. I've haven't eaten liver since, never will if I can help it.
