Looks like I need an assembly-line type efficient cooking.

You gotta be prepared for events like this. 15 people is childs play.

2 family packs of pork chops, 10 pound bag of chicken quarters, family sized can of pork and beans or ranch style beans, sausages, pack of boudain, rolls, beer and you should be good to go.

I like to break the chicken quarters apart before cooking.

I've thought about it. Few things:

1. No big table to accommodate 15 people (don't even have 15 chairs) nor fire up 15 servings of kalbi.

2. Kalbi is expensive as hell ($15~/lb), I'd be spending over $100.

I would have to go American, but come on. Burger and dogs are all you got? I was expecting a flurry of responses.

$15/lb for beef short ribs? o_O I can get USDA Prime Ribeye steak for that price.

If it was me, I would smoke a pork shoulder. That would be plenty for pulled bbq pork sandwiches, pork tacos, and pork burritos. Put out some bread, tortilla, and veggies and let the guests build their own. Chips and drink and the whole thing could be done under $50 easy.

It's because you're using a crockpot and using tiny pork shoulder. Pork shoulder from Costco is like 30lbs of meat. Even after you trim and smoke it, you're left with ~15lbs of cooked meat.

When I do it in my Smoker, I usually go with 1 lb of uncooked bone-in Pork Butt per person (adult with an appetite). I figure you loose about 25-30% of your weight to bone, moisture, and fat that melts away while cooking. So you should easily end up with somewhere between 8-12 oz of pork per person from a 30 lb butt. Forget the crockpot when you're cooking for that many people. You need to do it in a smoker or at low and slow temps (225-250) in the oven.

If I'm doing brisket, I prefer to do it at higher temps (350ish). Also, I've found that I loose about 40% of brisket weight after cooking.

Last time catered from a BBQ place. Worked out great. No cooking bs.

If you have 20+ you could order one of those Taco cart guys. I've done for 30+, worked out awesome every time. Best part is they clean up afterwards.

Yea, I can see the easy cleanup afterwards.

How about ordering a subway platter?

Sometimes the grocery stores will sell shrimp platters. Get a shrimp platter and a sandwich platter, and your good to go.
