Mole Scampi

1 1/2 pounds Moles
1/3 cup clarified butter
4 tablespoons minced garlic
6 green onions, thinly sliced
1/4 cup dry white wine
2 tablespoons lemon juice, fresh if possible
8 sprigs parsley, finely chopped
salt and pepper, to taste

Rinse moles and set aside. Heat butter in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add moles, green onions, wine and lemon juice; cook until moles are lightly browned and firm, about 1 to 2 minutes on each side. Do not overcook. Add chopped parsley and salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.

Eli, I'm gonna knock ya out if you keep justifying rodents in your lawn 🙂 They make the yard look uneven, they attract other animals that try to eat them. Moles are big, fat sacks of calories with no eyes are that are waiting to be eaten. I think God put legs on a potato and moles are what he came up with.

They are dirty rodents and I hope you washed your hands after you touched it. Tie a string to his tail with a time released stick of underground smoke rodent killer crap attached to it.

it depends on what you grow in your lawn, if you don't grow tubor type plants then moles are great for your lawn....if you live in an arid location where the topsoil sucks anyway.

Yes, I realize they are apart of the food chain. Something I try and preserve as much as I can around here. What's wrong with attracting other animals?

Hummingbird feeders are big, eyeless sacks of calories that are waiting to be eaten, too.. does that mean I shouldn't put them out? 😛

The trails they dig under your lawn are only about 8 inches to a foot below the surface. So when you step on one, your feet sink down a little bit. Just think what happens when you have a family of them and a dozen tunnels. Your whole yard is soft and sinks in when you step on it. Eventually you end up with little hills and valleys everywhere, and you are screwed.

KILL IT. It is a pest, just like a rat, or a cockroach.

But between worms and moles, get worms. Not moles.

nope, but they will screw up potato and iris gardens by pushing their roots out of the soil. 😉
