Standards my dear sir. Hollandaise must also have cayenne to be called hollandaise. Escoffier said so.
I don't think I've ever had cayenne in deviled eggs and I've certainly never seen it called for in a recipe and I've made deviled eggs many times. I'll give it a try though.
I make hollandaise sauce too but the recipe I use calls for white pepper, not cayenne pepper (yes, I do have white pepper in my spice cabinet).
