There was a christmas lunch thing at our local hvac dealer today. I loaded up on many foods and at the end I noticed there was a rack of deviled eggs. Yum yum.

Standards my dear sir. Hollandaise must also have cayenne to be called hollandaise. Escoffier said so.While you can certainly make them with cayenne it is not a main ingredient of deviled eggs or even a required ingredient. The main ingredients are simply mayonnaise, mustard and eggs.
