Standards my dear sir. Hollandaise must also have cayenne to be called hollandaise. Escoffier said so.

I don't think I've ever had cayenne in deviled eggs and I've certainly never seen it called for in a recipe and I've made deviled eggs many times. I'll give it a try though.

I make hollandaise sauce too but the recipe I use calls for white pepper, not cayenne pepper (yes, I do have white pepper in my spice cabinet). ;)

You can pretty much add anything you want but mayonnaise, mustard, and eggs are standard. The rest is up to your imagination. In the South, we use Duke's mayonnaise.

There's no end of variations, I just appreciate the standards. One of my pet peeves in restaurants is misusing the names of specific foods with well known standards when they have no connection like "bisque" which can have anything in it but, must have sherry. No sherry, no bisque.
