I am going to brew this weekend

Definately go for the ESB. Just finished up the last bottle of mine last night and I'm craving some more. But first I've got to make a Belgian Blonde Ale first, then bottle my High grav oatmeal stout that's been in secondary for about 2 months now. Starting OG 1.092, just about maxed my mash tun on that batch a bit over 18lbs of grain for a 5gal batch.

You can do either.

I prefer to build my recipes, but thats not as hard as a non-brewer might think.

Well I have some award winning Stouts that refute that. As long as its not to high of a gravity OG a stout is usually great within at least 2 weeks sometimes a few days shorter if you force carb in a keg.
