In the end, Frodo walks into a pawn shop and gets $6.50 for the ring. With cash in hand he goes into a Subway and orders a turkey and swiss cheese sandwich. He is irked to find the cheese is immitation and not pure domestic swiss, like he can get at Safeway. Displeased, he vows never again to buy a sandwich from Subway.

"Oh, okay, it's almost over, I can go to the bathroom soon"
"Wait, another ending? I guess I can hold out a few more minutes"

The books do the same thing. Tolkien had a bunch of loose ends to tie up and he was determined to do so if it took half the next age. The movie cut a whole bunch of stuff from the end of the ROK to move it along.
