How worth it is "Unlimited Data" on VZ?

This summer. Yes, if you buy a used phone or pay full retail price for it, you can keep unlimited.

My typical usage when I had unlimited Verizon: ~6GB/month.

Nearly a month with the Nexus 4 on Straight Talk: 400MB. When I include Wifi stats? 20GB.

The big difference? I'm actually using Wifi now, something I never even bothered to turn on when I had Verizon LTE.

You must be lucky to have decent wifi networks where you go. Every wifi, except my home, I've connected to has been shit, not good enough to stream HD video from Youtube, mlb.tv, Netflix etc. My work is pathetic, shared 1.5mbps for the entire office. Hotels are lucky to get 5mbps. That's why I can't give up unlimited and go wifi primarily. LTE is pretty much always 10mbps minimum, and usually quite a bit more.

FoxFi is hit or miss on JellyBean. And Verizon blocks it from tethering on a number of their devices by default. My RAZR HD is unable to wifi tether with FoxFi. There are work arounds, but bottom line is you're still breaking the Terms of Service.
