note:
if you eat it plain, there will be a bitter soapy aftertaste.
but if you put it into hot broth, the aftertaste is gone.

Since the article is only a day old, the author hasn't had a chance to see what happens if you just rinse it off w/tap water first b4 eating it plain.

going to try w/whole wheat Spaghetti.

I'd much rather read a post about how to turn ramen into spaghetti when there's no tomatoes or sauce in the house. :'(

Is there really some kind of superior, proper ramen out there? My only experience is with the $0.10 crap we all know and love. Is it like spaghetti-Os to proper Italian cuisine?

I used to eat a brand of ramen that had both a powder seasoning packet and sauce packet. The sauce was a little sweet and oily. It's been years since I've been able to find them, but they were the run of the mill $0.10 packet kinds. I loved that kind of ramen.

Part of the Ramen noodle process is using alkaline water or alkaline minerals to either prepare or cook the noodles. So you definitely have the right idea using baking soda.

I'd imagine lye would work as well, similar to how boiling first in lye water differentiates bagels from ordinary rolls.
