How to pick the right version of Vista?

I am building a new computer/webserver. I am planning on using Vista 64, but I do not know which version to use. I checked Microsoft's website, but their comparison is a joke:

I do not do any gaming or any sophisticated music/video playing. What other guides are available to help choose which is the best version?
