how to melt cheese?

anyone know how to melt cheese without it separating? and i'm not talking about 'cheese' like velveeta, i mean real cheddar and jack and stuff

Try a pot of boiling water with another pot of cheese on top of it.

what are oyu making?

Normally you add the cheese AFTER the pot has been taken off the heat. Add the cheese remove from heat, cover and let sit for a few minutes, then lift the lid and stir.

Use mild cheese too. Sharp cheeses will have a lot of oil in them that will pool when melting.

Like the dip?
Heat a few ounces of good beer (I use Yuengling lager since idt's cheap around here) over low-med heat. Stir in a few tbsp of chunky salsa. Stir in chopped jalapenos. Stir in cheese bit by bit. Use more beer for runnier mixture.

yeah like nacho cheese, sorta


hmmm... beer... maybe that is why kerbey queso is so yummy...

hmmm... beer... maybe that is why kerbey queso is so yummy...

This is basically how they make the nacho dip at The Melting Pot, which is a fondue chain. It's very good. Alcohol is a key to fondue - it helps it stay fluid.

Rachel Ray also makes a cheese sauce that has milk, flour and butter in it. See towards the bottom. It would need some modification to be used as a dip, but it could be good. It looked good on the show, but I haven't tried it yet.

i have tried useing real chease and makeing this but it is a pain. Using Velveta cheese makes a better dip. Just put some cheese and hotsauce (whatever else you want) in the microwave for a few minutes and stir.

Its great. I make it all the time. its a great dip and is great on cheeseburgers!
