I am wanting to flash my GT when it finally arrives and wonder if there is a guide or walkthrough somewhere I can follow because i have never flashed a GPU before.

Read this. You will need NVFLASH 4.42 I found that one works best with the 6800 cards. You will also need the Nibitor version 1.6 used to be called OmniEtremeEditFX.. You can get the Omni/Nibitor tool here as well as a bunch of useful info..
