How to cook catfish fillets? :update: -used fish taco recipe

Catfish fillets were on sale for <$4 a pound. I bought 4 pounds. That's quite a bit of catfish :)

Anybody have any favorite recipes? I'm a somewhat accomplished cook, so I'm willing to try anything.

How does it freeze btw? I don't know if I want to cook it all at once.

I'm actually going catfishing tonight so i looked up some recipies online. I plan to marinate them in butter, lemon, salt, and peper. then BBQ in foil or on the grill.

My Granny used to soak them overnight in the fridge in milk and then pan fry them in cornmeal ;)

They have catfish at Popeye's chicken...you might just want to call them and ask how they do it.

Pan fry in cornmeal, smother in crawfish etoufee = Catfish Luzianne
Serve over rice or bowtie pasta.

Now i need to catch some catfish. bah!
 

while blackened is DEFINATELY my favorite - it's kinda hard to do

some other favorites:
beer battered catfish (recipe http://www.recipeladies.com/files/beerbatteredcatfish.htm)
cajun catfish (recipe http://www.chef-recipes.com/spicy_catfish_pan_fried_new_orleans_style.htm)
and lemon pepper catfish (i usually panfry using lemon and butter, adding lots of salt and pepper - but my wife bakes the filets in a pan of butter and lemon with lots of salt and pepper - i've been wanting to try to grill it, but haven't had the opportunity yet)

Cut them into nuggets and batter them with cormeal and flour of something else, then deep fry them until they start to float.

This looks good and pretty quick.

SPICY BLACKENED CATFISH


Can be prepared in 45 minutes or less.
2 teaspoons sweet paprika
1/2 teaspoon dried orégano, crumbled
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon cayenne, or to taste
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 catfish fillets (about 1 pound)
1 large garlic clove, sliced thin
1 tablespoon olive oil
1 tablespoon unsalted butter
lemon wedges as an accompaniment

In a small bowl combine the paprika, the orégano, the thyme, the cayenne, the sugar, the salt, and the black pepper, pat the catfish dry, and sprinkle the spice mixture on both sides of the fillet, coating them well. In a large skillet sauté the garlic in the oil over moderately high heat, stirring, until it is golden brown and discard the garlic. Add the butter, heat it until the foam subsides, and in the fat sauté the catfish for 4 minutes on each side, or until it is cooked through. Transfer the catfish fillets with a slotted spatula to 2 plates and serve them with the lemon wedges.

Serves 2.

just panfry the mofo. i panfry almost everything. then sautee mushrooms and some other random veg, and set it around the catfish. mmmmmmm
