How to cook a good steak?

I have an iron skillet... I think I heard I need one of those. So... tell me how it's done! Marinating, cooking, etc. I remember a thread like this not that long ago but I didn't pay attention and can't find it now. :)

I just put some salt and pepper on it.
Start at high temperature in the frying pan to seal the meat on both sides to keep the juices in.
I then reduce the heat slightly and cook on medium heat until done. (Medium rare)

I do prefere cooking on the BBQ.

I have cooked them in iron skillets when I have run out of fuel for my grill basically you need to season it, or marinate it if you like and tenderize it with a meat hammer before cooking. Other than that it?s up to you how you like your steak. I like mine medium rare, can't stand shoe leather steaks! :D

bah, u don't want any of that panzy 'extra flavor' crap, just stick it on the grill or BBQ. mmmmmmmmmmmmmmmmmmm :D

Me personally... I thaw it a bit, then I poke it with a fork on each side, throw a little bit of salt, a little pepper, small amount of garlic, and I coat it with a little steak sauce, its a local brand tho and Ive never seen it anywhere else, most sucks tho because it covers up the taste of the meat. Mmmmm good. Of corse I cook it medium... Ill never get how people get them well done etc... BLAH takes out all the flavor. And never put on too much flavoring... I use just a little of each thing I said... too much and your just covering up the flavor of the steak itself. Unless its crappy meat, then covering up the flavor of it isnt such a bad idea :p

Marinate in red wine with steak seasoning (available at any grocery store) or with the seasonings you like. Oh, and grill it. Never ruin a steak by depriving it of the open flame!

My mom has always made them on the skillet or grill or whatever and they are dry as a mofo!

Well, about 2 dinners with them ago, she made them by baking them in the oven with foil over the caserole dish and some liquid in the dish as well.
THEY WERE THE BEST STEAKS I HAVE EVER HAD! They were so juicy and tender.... Awwwww........ She will continue to make them that way, if she knows what's good for her. :D

Too high heat and over cooked. She needs to keep the heat low to keep from boiling all the liquid out of them.

I just stick them in a oven. Put the steak close to the top heating iron and set the oven to 400 degree broil. Broil them for 4-5 minutes each side for medium-rare.

With an iron skillet is even better, season your steak with salt and black pepper. Cook the steak in the skillet on stove for ~10-15 seconds each side to seal the juice in. Now stick your skillet with steak in a oven and follow the above step. Juicy!!

marinating in red wine tastes nasty. am i the only one who likes the plane grilled taste? (add abit of salt on the uncooked meat)

take the steak and soak in soy sauce for about 2-3 minutes.
remove from soy sauce and put a bunch of salt, pepper, oregano on it.
Put in a teaspon on olive oil into hot skillet
Fry in hot skillet for 30 seconds on each side
then put in oven at around 350 degrees for 10 minutes... (depending on thickness of steak and how you like it cooked)

I would suggest that you look in to broiling the steak rather than frying it.

... also, going to the store and investing in some steak seasoning would be a good idea. :)

that's what i do. some oil in teh pan and sear both ends. Then stick in the oven and wait.

crispy outside, juicy and yummy inside.

The iron skillet is for searing the steak (seal in the juices)

1. Go to a butcher and get good steak - don't buy at supermarket.
2. Take out of fridge and let sit for 30 minutes (to warm closer to room temperature) Light charcoal grill about halfway thru this waiting period
3. Put pinch of salt on one side and then dust that side entirely with pepper
4. With your hands rub (hard) until all salt and pepper disappear (flip and repeat)
5. let sit for 5 minutes
6. put cast iron skillet on large back burner on high until skillet just starts to smoke (assumes you have a seasoned skillet - if not you need to season the skillet first by coating it with peanut oil and cooking in oven at 300 degrees for an hour).
7. put steak on skillet (don't move or touch after putting it down) for two minutes (flip and repeat)
8. Finish cooking over charcoal (20-30 minutes for medium well). Start the charcoal grill

I always thought marinating was used to make a poor, or tough cut, into something edible.

Anyway, if I cough up the money for a decent piece of meat, it's going on a charcoal grill, no two ways about it. Might as well throw it in an oven broiler as throw it on a gas grill, IMO. No freakin' way I'd cook meat in a fry pan, unless it was ground meat, as part of a sauce.

Marinating a steak is like ricing out a ferrari.


Maybe a bit of salt and pepper, I like a bit of steak seasoning... You HAVE to grill it too. Throw it on a high flame. Once the one side looks not raw, flip it. After the second side looks like the first, turn the heat down a bit, and then let her cook until it's done like you like it. Make sure to even out the outside too by flipping if one side gets done more than the other.

Rub olive oil on both sides of the steak.
Put a dry pan on a burner on high heat.
When the pan is really hot, drop in the steak for 30 seconds, then flip it for 30 seconds on the other side.
Then, put the pan and steak into a oven that has been pre-heated to 500F.
After 2 mins, flip the steak, and do another 2 mins.

You may need more or less time depending upon the fat content, thickness of the steak, and how well done you like your meat.

Grilling is the best way IMHO. Never cut the steak until you are ready to eat. Initially you want to sear the steak with high heat to seal in the flavor. Reduce heat and cook until desired done-ness. 10 minutes (turning after 5 minutes) for Rare to Medium Rare. 15 minutes for Medium rare to medium and so on. It doesn't matter if it's marinated or not. I personally prefer plain, un-marinated, but there are times that marinating is called for. London Broils should be marinated. Nice cuts like New York Strip, T-Bone, Porterhouse etc should not be marinated. Again, this is a matter of preference. If you don't have a grill, broiling is the next best way. Iron skillet method is my last choice.

skillet works great, but makes a lot of smoke.

Way to tell skillet is hot enough, throw some salt in it, if crystals dance around it's hot.
