What are the apps and steps that I can take to do this?
Commercial OCR packages make your task very easy, and can scan directly to Word files or PDFs. The actual steps involved are just scanning to an image, then inputting the image to OCR software.
I've never used it for receipts, which can have very small, not so legible type, but ABBYY Finereader is the leader of the OCR pack. At > $150, though, it's not cheap. There is a trial version available.
I've never used Nuance's Omniport (oops, make that Omni
Page) myself, so I don't know how well it works. It has middling reviews on Amazon, but is, at the moment anyway, discounted all the way down to $29 on Amazon. Whether that indicates its quality level, or just it's lack of a foothold in the market, I don't know. Unfortunately, I don't think there's a trial version. [Edit] Apparently there is a trial for the professional version, which appears to use the same OCR engine.
I've played around some with open source OCR but frankly, it doesn't work nearly as well as Finereader, and is somewhat of a PITA to get up and running. I assume you already have a scanner. If not, and/or if you're in the market for a new one anyway, a "lite" version of ABBYY is sometimes bundled with them, so would be something to look out for.
