Wife and I need to catch a flight at 6am to EWR. This means we have to leave at 3:30 AM at the latest.

I want to check out Uber or Lyft for the first time for this. Is this suitable? Do they offer options to make an appointment or do I have to request a ride at 3 AM and hope for the best?

Should be fine. Bars close around that time so there are drivers out and about working. Just open the app around 3am and look at the estimated time/how many drivers are in your area.

So, no advanced timing of sort? I don't live in the city- the suburbs of North Jersey. That's why.

You said 3:30am at the latest so that's why I said check at 3:00am. Check at 2:30 ish and gauge it with how many drivers in the area and estimated time til pick up. It should say on the app.

It'll be area dependent. Where I live, no problem. Where you live, I've no idea.

Use AznAnarchy99's idea and check it out a night or two to see if you'd have an issue.

I tried this before work one time with Uber at 6:20 ish. There was like no one around. Someone finally popped up but was like 10 min away. Ended up being 30 min late.

I live in the suburbs.

Don't use Uber ever they have a price surcharge that can increase at anytime. So instead of your fare being as much as a taxi or a little more, depending on what Uber service you use, it is 4 to 8 times as much.

All the shuttle services we use would be scheduling pickup no later than 2am. OTOH they do pick up more than one person.
