Depends on a number of factors but having two sticks enables dual channel mode and that can significantly improve memory performance. With AMD chips, the difference can be quite startling.

On an Intel chipset, probably not as much as you might think.

Well it's just a $350 build for internet/music/videos etc; it's with a $55 gigabyte mobo, E1200, 2gb ram, geforce 7050 in mobo, 500 gb hdd
so the speed wont matter.

Yeah, i wouldn't get too worried about the slight loss from no dual channel in tht kinda config
