How much RAM for HTPC and W7?

My main desktop (2500K, 8GB RAM, W7) hardly ever goes over 2.5GB RAM in use, including video encoding (using Handbrake at the moment.)

I swapped out my extra 2x 4GB sticks into my buddy's new W7 Dell, and took his 2x 2GB cards, planning to put that into my HTPC build instead. The HTPC will have a G620 and most likely W7... will 4GB of RAM be enough? I don't know if there will be a difference in RAM useage with a different processor (i.e. 4 cores vs 2 cores) and video encoding.

4 GB is plenty for an HTPC.

My HTPC is running a core 2 duo E8500 with 2GB a ram and windows 7 64bit. It runs fine.

4GB is plenty even for some gaming

My htpc runs win 7 64bit on my old Opteron 170 with 4gb of ram and xbmc.
