How many acres would I need to build a racetrack?

well land usually comes in sections (1sq mi, 640 acres) or quarters (1/2mi x 1/2mi, 160 acres)

can get two quarters and get 1mi x 1/2mi, 320 acres,
or half a quarter, 80 acres, 1/2mi x 1/4mi, etc.

etc.

an acre is uh.. furlong by a chain, right? 22 yd x 220yd. (edit: doesn't have to be rectangular though, of course)

so decide what you need...

Really big RC cars.
The track area itself would be small, maybe .33 acres. All total, about 5 acres.
You have to factor in the following:
Track
Parking
Restrooms
Accessory store
Restaurant
Bar
Massage parlor

Depending on how loud everything is you may need to get enough land so you don't end up with neighbors that complain about the noise. That could easily be far more land than you'd need for the track itself.

Infineon Raceway uses about 900 of their 1600 acres just for track operations.

Why don't you take up a different hobby. Get some dirt bikes. A square mile would be good enough for a pretty good track & enough parking, restrooms (portapotties), etc. Then again, you'd need water for a good track; at least the good tracks around here are watered when they're groomed.

acres? That's based off of square miles, which you need to stay away from. You would need 3000 circular feet.
