best way to cook salmon -
hot hot pan - on the cook range - sear salmon on one side in small amount of olive oil, for about 2-2 minutes, flip over, sear other side for 2-3 minutes
toss into a 350 degree oven for about 10-12 minutes to "finish" the salmon (get the inside cooked)

you can do it all in a shallow pan if it has a metal handle, otherwise transfer to a metal tray.

you can cook chicken or meat this way perfectly (this is how restaurants do it)

the searing "locks" in juices, and give flavor through carmelization, the "finishing" in the oven allows you cook the inside to the degree of doneness you desire.
works great if you liberally coat the outside of the item with a dry spice rub..

About five on a side if you like moist meat maybe a bit rare in the center, but every broiler's probably gonna vary some. Try five and if it's not enough for you return it quickly to the heat of the oven lan let it sit five at 325, not under broil.

Sprinkle on dill if you like it.

you don't sear in olive oil. the smoke point is too low, the oil starts to chemically break down. use peanut.

An even better way to cook salmon is to slice it thinner. Heat a stone cutting board and but the salmon on it. Bring it to the table and it will cook perfektly before your eyes.

bet it was hard getting it on the peanut to begin with, since it was flopping around all over the place
