Think of it this way: "if" is often used to signal a hypothetical situation. Hypothetical situations are spoken of not as if they were occurring at the present, but as if they had occurred. So, "were" is the past subjunctive and permits us to use it in such context. So, when next you're conjecturing, do not say, "if I was you" or "if I is you"; instead say, "if I were you".
