How is the sound information transfered in a 3.0 or 3.1 speaker setup?

If I have a front left and right speakers, along with a center channel speakers, and I program my receiver with no surround speakers connected will it send the surround sound to the L and R speakers? Will the center channel still play the main on-screen dialogue?

My receivers instructional manual has no remarks on a 3.1 / 3.0 set-up; all that I can find what it says is you can turn the surround speaker connections on or off. It does not say where it sends the surround signal to (as if it is full stereo).

On another subject
I decided against tabletop speakers (as noted in past topic); the small Mythos I auditioned lack along the low frequency range, but do sound far better than other typical small speakers; a subwoofer could fill in this area, but really? I already have a good set of tower speakers, so adding a voiced match center channel is my new idea.
