I know this is probably a stupid question :(

I cooked like 2 pounds of chicken last night, but I kinda overcooked it. it's not burnt, but it's kinda dried out. I hate wasting so much chicken, so I was thinking maybe I could turn it into a chicken salad and counter act the dried chicken with some mayo, but I have no clue how to take my boneless skinless chicken breasts and get them to the same consistency that you find chicken salad in.

what do they do, like pulse it in a food processor?

I just pull apart with two forks and/or my hands.

If you want it smoother, use the food processor. That's what we did at the restaurant I worked at.

I shred chicken when it's raw by pulling it apart with my hands. I'd imagine it's the same for cooked.

If you want shredded chicken it might be easier to pull apart if you cook it in a crock pot. I've seen it done before and the chicken was so tender it pulled apart nicely.

A chef's hands are his or her's best, most versatile tool. After you shred it, steam it just a bit in a covered pot and/or marinate it in whatever you wish overnight in the fridge, again covered.

Also, counter act /= counteract.

This. The forks are a bit slower but work if the chicken is tough or still hot.

reading comprehension fail.

Do what Leros said. Just rip it apart. If it's so crispy you can't, toss it and start over.
