"Good cuts"?, there are only so many ways to cut meat, a T-bone is a T-bone no matter where one buys it although I would agree most supermarkets cut steaks too thin but you can always ask for one cut thicker..

Not true at all. Most supermarkets carry select cuts only, some say choice but it's iffy. I have a market near me that carries prime cuts of steak and I can assure you that it is vastly better than the shit you get in the supermarket. Of course, it's more expensive too.

"Prime" or "choice" or "select" are considered grades. Cuts refers to the specific part of the carcass you are buying. As far supermarkets all the big chains (around here anyway) use choice except for Food lion which uses select. Your lucky you have a market near you that carries prime, most of it goes to high-end steakhouses, and your right, the difference in flavor and texture are significantly noticeable. When I worked at US Foodservice we did lots of portion cutting for various restaurants and occasionally a prime loin would get mixed in with choice or select so we cut steaks for ourselves out of it!..

For steaks i just use rubs and cook on charcoal and wood.
For hamburger i do the same except i add a few extra ingredients before i cook, usually a little mustard, liquid smoke, salt and burger season rub.

but ALWAYS cooked on charcoal and wood chunks..usually hickory or applewood.

Well "cuts" and "grades" could be considered somewhat interchangeable so some truth to that. There is also a misconception that Select is from inferior cattle but it's just how the USDA inspector grades it out, select just lacks the marbling, as long as one doesn't try to cook it medium it's not too bad IMO..
