I think I've always gone somewhere between 'ee' and 'ay' -- like the 'e' /ɛ/ in demonstrate or the 'ae' in aesthetic. However, being a Latin word with a Greek root causes problems. Here is a short essay on how English speakers basically can't pronounce this letter:
https://www.merriam-webster.com/words-at-play/how-to-pronounce-ae-in-english-words-diphthong

And here, if you click the sound icon, you get the Greek pronunciation: https://translate.google.com/?sl=en&tl=el&text=Daemon&op=translate

Here is the Latin (which is arguably unknowable): https://translate.google.com/?sl=en&tl=la&text=Daemon&op=translate

However, the character, Æ, is still apparently used in Danish. Check out how this sounds:
https://translate.google.com/?sl=en&tl=da&text=Daemon&op=translate

The Danish version sounds a lot like the way english speakers pronounce the 'ae' in aesthetic.

So, my answer is ---the ae is slightly shorter than a long Ā, but slightly longer than a short E (or /ɛ/ )

I think the only truly correct answer is that there is no correct answer. We all know what we are trying to say, and we all know none of us has any clue how to say it
