I've become a pretty big fan of Alton Brown's hot cocoa mix recipe. usually make up a big batch of it on the first snow day of the year since it's all ingredients I always have in-stock anyways.

when I've got time to futz with it (re: when I want to put in more effort than just boiling water/milk), I'll do 4 cups milk + 8 ounces of chocolate on the stove along with vanilla extract, sugar, and a dash of instant espresso powder.

I don't. I like coffee for a hot drink, and if I want something sweet, I make chai.

I made some hot cocoa the other week that was quite awesome.

I used a 1/3 egg nog 2/3 soy milk and a packet of premix (all I had at the time) and then added nutmeg and cinnamon to taste.

90% of the time I just add boiling water. I'm too lazy to add milk and marshmallows etc.

Been buying those chocolate sticks recently from a local chocolate shop. Warm up some milk, stir it around for a bit et voila! I don't really drink the stuff, but chicks seem to dig it.

I just use Nestle cocoa powder with hot milk (as opposed to water) and roughly double the chocolate called for by the recipe. It's heinously unhealthy, but delicious. Speaking of which, I haven't had cocoa in years; I should get some and some peppermint schnapps and have myself a nice, cozy couch party.

I stopped drinking hot chocolate when I was 10 and discovered whiskey.

you're missing out :(

I don't drink it often, but I like a mug on a cold winter night with a shot or two of something alcoholic (generally when it's too late to be drinking coffee if I want to fall asleep any time soon)

I make hot cocoa for my kids like this:

small sauce pan on low, combine 2 tbsp cocoa, 2 tbsp sugar, 2 tbsp water and mix it up with a whisk. once it's all mixed and warm, add 8-16 oz milk. mix it up and wait for it to get warm.

they love it, it's hot cocoa...not hot chocolate. just add marshmallows.

this way is also good if I want some. I can't drink the packaged stuff because it usually contains something like sodium caseinate or some other ingredient I shouldn't have.

Quite a few Europeans who beg to differ It's consumed as a breakfast drink in Spain as an alternative to coffee. Quite a bit thicker than what you get here.

Cocoa is fairly easy to make. I do it in the cup. Tablespoon of cocoa powder, one or two tablespoons sugar (brown sugar is best IMO), little milk and mix into a paste. Heat the rest of milk then stir. Sometimes I add powdered ginger (you don't need much) or vanilla extract. Mint extract would probably be really nice. You can also use rum to make the paste.

I make ours in the Vitamix, pour Almond milk in the blender, set to low, pour in chocolate Shakeology, close top, increase to super fast. Profit.

Champurrado is good stuff. One of the hole-in-the-wall Mexcan places here serves it. We like to go there on cold, nasty days. My wife makes it occasionally.
