How do you make the macaroni and cheese you get at fried chicken type places ?

That stuuf I have seen at KFC, Popeyes, Churches seem to be elbow macaroni and processed american cheese.
 
1/2 stick butter, 1/2 cup flour, 3 cups whole milk, 2 cups heavy cream, 1 tablespoon dry mustard, 1 lb macaroni, 2 pounds sharp cheddar, cayenne pepper.

Melt butter with flour, cook together a bit. Add milk, cream, mustard. Dump together with the cheese (shredded) and cooked macaroni. Add pepper to taste and mix together. Bake 30 minutes at 350 degrees (you can put breadcrumbs on top for a crispy crust) in a casserole.

Damn good. Not exactly healthy, but damn good.

Only macacroni and cheese i've tried out of those 3 places is the KFC one, and that's disgusting.

Because KFC's all you can eat buffet is fantastic. All you can eat chicken, biscuits, and...of course, MAC and CHEESE! 😀

Good Eats is probably the only show on Food Network that I watch anymore. The humor is corny (but makes you grin) but what I really like is how he explains the details of what and why, instead of just the usual do this/add that you get from most TV chefs.
 
I've tried Alton's baked macaroni and cheese recipe and found it to be excellent. Easily the best mac and cheese ive had.
 
I'm not talking about fast food chicken (KFC, etc...)

I'm talking about soul food chicken, ribs places
or a grocery store deli
They have great macaroni and cheese

AB is excellent. The science of food interests me as much as the food. He made (real) Carolina pork shoulder the other night. In a ceramic planter. With a hot plate. And pieces of hardwood to make it smoky. AB > Emeril.
