I just posted because I was a little worried that if I go in there for the first time and don't know at all what I want, they'll just give me a crappy butcher that will be with me for a month or so.

Do you like the way your mom cuts your hair? If so, just print some pics of yourself, and ask the barber to give you same haircut.
