It would be nice if you told me how you do it lol.

Yeah, and how is it "worth it" versus a non-stick pan? I cook my eggs in a non-stick pan any chance I get and I've never noticed a difference in taste, texture or anything else.

Sorry... I've been really stressed out tonite. It's worth it to me because I don't have to worry about scratching the toxic teflon surface of the standard pans. As far as how I do it, I use a little butter, I dont heat it too much, and I am sure to move the eggs around a little while they cook.

word on cast iron.

absolutely nothing fries an egg like a cast iron pan, and I'm a cuisinart multiclad stainless steel set owner.

non-stick pans are ass for eggs. the texture of the egg is just wrong.

yes, lower heat and margarine instead of butter. Butter will break down under intense heat and should never be used at temperatures above 160°F in a frying pan (baking is a differant story). Use Margerine at Medium Heat, but not too high as it will burn.

I am a vet of 18/10 Stainless Steel Cooking.

Only if it well seasoned and old. Newer cast iron pans stink at cooking, the best ones are old ones that have been used almost daily for 20 years or more.

haha that actually caused me to laugh out loud. Not because it was THAT funny but because I instantly imagined some brainchild on here actually trying that after reading your post and I visualized the end result.

The end result is quite similar to poached eggs if you add some water.

lol, I always use high heat to fry my eggs. it turns out ok if I have enough oil. I can flip the egg without using the utensil

I usually cook with pam on a teflon pan.

Medium usualyl works. Too high your egg will cook uberly fast.

For someone who likes over easy, I leave it on medium usually. My parents cook it on high and do a pretty damn good job. Wait till the edges start burning a little before you flip...

And yes, your pot has to be hot to start with, so wait till the oil gets liquidy...

Flipping is the trick. If you're comfortable, you should flip them pretty easily with a spatula. Or if you're even better just throw them up. I gave up on spatula a few times and I just tossed them. If you have a thin spatula (unlike the fat one I have in my apt), then you can flip them easily. Otherwise, you'll end up smashing the egg or folding it which I do half the time. I really need to go grab a better spatula from home.... Usually I hav eno problem cooking eggs at home esp in a large pan.. In my apartment, the pan or stove is tilted so the egg always goes to the side =(

wait 'til the oil smokes....then again I haven't cooked on a steel surface in years

well, smoking oil isn't the best but when it's very watery it should be good to go
