How do you encode your audio?

Probably on a PeeCee, you have to worry about all that. On a Mac it's all done transparently very quickly and easily.

Nope. I make DVDs and encode audio in AC3.

While I would love to have DVD-A, I have no way of really enjoying it properly.

Would be cool though.

On a different note: I have a cool plug-in that allows me to create 5.1 surround out of a 2 channel source audio file.

Not in iTunes. It just does it automatically.

you do know that as of a month or two ago, you can rip DVD-A discs, right? no overpriced player needed anymore if you have a high end soundcard/DAC!
