Steel cut, add slightly less water, maybe 20% less, and into the crockpot for half hour to hour of simmer, then let it cool some. I usually have a bowl right away, but the bulk I put in snaplid plastic containers and put in the fridge.
Prep to eat, add missing fluid in 2% milk, zap in microwave, stir, add salt and whatever sweetening agent, Stevia, Splenda, most often some kind of fruity or flavored granola.
Done right the steel cut isn't so much chewy as it is sort of plump and grape like, not glue like.
