How do old style mechanical rice cookers know when the rice is done?

when rice is done it reaches a certain temperature
any rice cooker will simply prevent the temperature of the pot from going over that particular temperature
 
When the rice is boiling and cooking it never exceeds a certain temperature due to the water content. When it's done cooking and enough of the water content has been reduced, the temperature rises to a certain degree and the rice cooker shuts off or goes into warming mode.
