for Windows ... Serv-u is my favorite.
ffmcobalt was already nice enough to link to it.
It takes up like 1 to 2 MB of ram (i only have a 5 user limmit) and is quite stable, For ever 24 hours of CPU time, It takes about 1 minute on an Athlon XP1800. IMO its very easy to set up IF YOU READ THE DOCUMENTATION.

If you choose to install it, and run into any problems .. just ask and if Im around I'll help out.

I would avoid using IIS only because it seems to be the favorite target amongst the malicious types (not sure if its just duo to anti-microsoftism, of if its easier to break)

I second the notion, NOT to use the built-in FTP in IIS with Win2k. Unless you absolutely know what you are doing, I would choose a third-party FTP software.

i ended up going with serv-u based on nik's recommendation. It was super simple to setup after i played around wtih it for a bit (ya, like i'm really going to read the instructions 😛). Serv-U Pro is an excellent program.
