how do I prevent my eraser from hardening?

It's oxidation, from oxygen and/or ozone. Probably more trouble than it's worth to try to stop. scrub off the outside with some abrasive and you can get to some "fresh" eraser goodness.
 
Get white vinyl erasers (Staedtler makes good ones) instead of Pink Pearl or art gum. And especially not the kneaded erasers.

magic rub, staedler, etc

The outside may form a hard surface but for me if you just rub away that outer layer the inside is perfectly fine. Although I have to say I've never had this problem with Staedler and magic rub erasers.
