How do i copy text from a book from a scanner and then copy that text into a word document?

I have some old books that I want to make backups of. How would i copy the text with a scanner so that i can get the raw text from them? Do I need a ocr program? if so is that all i need and what one is the best?
 
I use OmniPage at work. Scan, OCR & save as a Word document or as a text file. It's o.k., although if an ocr'd image is saved as a Word doc, the texts are in text boxes.

Xerox Textbridge Pro is a good OCR package as well. All you need is some OCR software and it will copy the text so you can use it in a document.
