actually an easier method is to desaturate red.

look at the picture - not much red...so if you reduce the saturation of red - you can turn it gray without affecting the other stuff since it has minimal red.

for that they actually use a form of CAD. My GF was a fashion merch major and she had to use it in one of her classes. They basically take a "template" shirt and can put any color or design on it and just fit the template to the model. They then change the color or pattern by retexturing the template. Kind of a neat process.

Yes they could have, but there are lots of (possible) reasons to photoshop it. The biggest of which is that a photo shoot, per hour (with a photographer, model(s), possibly makeup, and other assorted support people), costs a whole lot more than a decent photoshop artist. Especially once you figure that a photoshop artist will need to clean up each shot anyway (clean up one shot then change shirt colors is less time than cleaning up a bunch of single shots).

It's the same picture; I analyzed and compared all of the wrinkles on the shirt.
