Well now that my system is running properly I started playing around with overclocking.
So far my highest stable speed is exactly 2000MHz. I can't run at 2100 even on 1.75v. The CPU temps in the BIOS are about 55-58 degrees at these speeds, but anything over 2000MHz just reboots while in games. The motherboard temp is 28-30.
I have tried 190x10,5 and upped the FSB bit by bit up to 220x9 and both seem OK, so I know the CPU and memory can do over 200 FSB. It just seems the CPU wont take anything over 2000 ;(
What's my option now? How far should I go on core voltage? I realise my Volcano 7+ is holding me back, but right now I can't upgrade the HSF.

2500+ Barton DKV4D 0320MPMW
Asus A7N8X Deluxe r2.0 with 1004 Uber BIOS
Volcano 7+
2x512 Infineon PC3200
ATi Radeon 9500@9700
