If you want to pay big $$$ you could go to one of those data recovery places. When you delete a file it does not wipe out the data, it just removes file from the directory. As long as you haven't written much to the disk there is a good chance the data is there.
Do nothing with that computer, get one of the disk-recovery programs (advanced search, "undelete", Software forum). If you've written to the disk since the deletes, recovery is less likely.
Its pretty easy thing to do, like if you're tidying up my documents and just crtl click one too many times. You continue deleting or whatever and when you empty the recycle bin you don't really care to look at all 40+ items and blam.
BTW, using unix and the rm command for a while will get you fixed for accidently removing stuff you didn't mean to =P
