I am in the process of building a media center server that will also act as my internal backup server, running 24/7 with Windows 2008.
I haven't decided on the case, but I like the Antec cases and Silverstone. Antec comes with a 380W PSU.
I am cannibalizing my old PC to build this thing... so I have an ATX motherboard with Q6600 Core2 CPU (not OCed), a 1GB Radeon 4850, 4GB of RAM (which I might up to 8GB, we'll see), and possibly two hard drives in a mirror.
I don't know how big of a PSU I need. I might be gaming on it a little bit, as it will be hooked up to a big screen TV so it's not out of the realm of possibility.
