This http://www.wickededgeusa.com/demo.html is what I use for all my knives. the guided systems like this do a great job of maintaining the correct angles. I know is seem like a lot of money for a sharpener but I have a thing for good steel and compared to to 30k I have in knives it is not a lot.

There are less expensive guided systems I have also used the Lansky with great results.

For many users the Spyderco Sharpmaker is perfect as long as the edge angle does not need to be reestablished.
