I own a both the professional & commercial hard-anodized set-
Calphalon has discontinued the Professional hard-anodized and replaced it with the commercial H/A-
Both sets are identical aside from the handles/lid handles- The Commercial H/A handles are the newer stay cool handles. The handles on the Pro H/A will conduct heat and will require the use of pot holders when the pot/pan is hot.
The handles on the Pots & pans of the Pro H/A can get VERY Hot, however, because the material of the handles- the Pro H/A can undergo higher oven temps than the Comm H/A. Don't worry, both H/A series can exceed 450 F in the oven.

For the Price, Its DEFINATELY worth it. I can live with using pot holders for that price. Calphalon carries a lifetime warranty too. The H/A line, especially the Pro H/A is made in the US while the newer lines are being produced in China (Tri-ply Stainless, Copper). This is quality stuff.
This H/A stuff does not have a non-stick interior but is pretty stick resistant because of the anodization. This allows the use of metal utensils and "brown" food better than the non-stick line.
Buy this set for the price, and add a couple of the Calphalon Try-me Commercial Nonstick omelette pans to your collection.
My fiance likes the fact that they are easy to clean- everything comes off with a scotch-brite pad. However, the larger pieces are quite heavy for her.

Nothing in the 8pc set is crappy. These can go from the stove straight to the oven for baking or broiling without any worries. The pans in this set are hard anodized aluminum- They are somewhat "less stick resistant" than teflon coated non-stick pans, but they are still very easy to clean and cunduct heat very evenly. They are absolutely great for browning chicken & sauteeing food, pan frying etc..., I can cook eggs on them with no problem and can use metal utensils and not worry about harming the finish. However, having a "teflon/non-stick" pan In addition to this set would be optimal for cooking stuff that is delicate such as omelettes, eggs, crepes.

You CAN cook eggs on these if you use a little oil and allow the items that you cook temper before throwing them into a hot pan. The included fry pans are still better than using other aluminum or ss fry pans - Just don't expect them to function like teflon coated non-stick pans.

In my kitchen , I own strictly hard-anodized calphalon pots & pans, with the addition of a 10 & 12 in commercial H/A exterior non-stick interior omelette pans I use when I fry eggs, make pancakes, crepes, omelettes etc.

I agree with all that you said, except I still think this is good stuff even for higher end users. The Classic Professional H/A is identical to the Commercial H/A except for the stay cool handles. The Professional H/A is still right at home for people with Vikings & Sub-Zero's at home. The problem began when Calphalon begain to offer too many different series. If you want Stainless- All-Clad is the way to go.

If you do, you void the lifetime warranty and the detergents will eat away at the annodizing.

Dang it, that ruins it for me. The wife won't use anything that can't go in the dish
washer. That's why we finally had to stop using the George Foreman grill. :(

Deal is over, but wanted to add a couple of comments.... I have a bunch of the Commercial H/A and love it.... I have a couple of non-stick omelette pans I use for eggs, otherwise I am happy with the H/A for most everything else..... One caveat though, they recommend not using the H/A with acidic foods such as tomato sauces, as it reacts with the anodization.... I also have a couple of All-Clad stainless I use for acidic foods.... FYI..

Seem people like to have one matched set for everything, but I find no one set does everything well....

Meh, you can do it just don't put it in detergent. I do it all the time.

I have a buttload of calphalon but truth be told my favorite pieces are the all-clads. They're just soooo much nicer. :)

I agree.. I have both calphalon and allclad and the allclad kick sooo much ass.. I wish I had more but they are SO expensive..

Certain acidic foods, like tomatoes, react to aluminum (not annodized) and turn colors. Scientists used to say it released toxins and was bad for your health. Recent studies found there are no hazards. Most restuarants use aluminum cookware.

Annodized aluminum eliminates the problem of the reaction by creating an impenetrable oxide film over the aluminum.

Hi,

I have an All-Clad LTD omelette pan and as much as I love it, I find it very hard to make omelettes in it without using a lot of oil. I try to keep it clean with the recommended Bar Keeper's Friend but it still sticks quite a bit. Is there something that you are doing to make it more manageable? Thanks!

ARGH! I saw this Friday. Shoulda done it. Had I remembered the $15 off, I definitely would have done it. Probably two, so I had a set for a gift. What was I thinking? Not that I need the H/A. I have a SS wolfgang puck set that works just great and cleans up perfectly with barkeepers friend. It should suffice while I put my money toward a house instead of a well-stocked apartment!

Does Calphalon make a SS set? Most of the stores by me (Williams-Sonoma) seem to concentrate on All-Clad. I don't find their handles very comfortable. If I were to go forward, I'd at least want to try and find a different brand of tri-ply SS.

Looking forward to the next run of these to save up for Christmas.
