Homemade lasagna

Just put a pan of lasagna in the oven. I got a little adventurous. Has anybody ever tried kale in it? Am I going to be sad in an hour when it's done?

I just made one with Spinach in it. Was quite good, just froze the last 1/3rd of the pan.

I thought the kale might hold up to the extended cook time better than spinach, that's why I tried it. I hope it's good, I made a double batch in my big turkey roasting pan.

Use cottage cheese instead of the ricotta that most recipies call for. Yes. It's better.

I grew eating lasagna made with cottage cheese. Mom makes fantastic lasagna, but I prefer ricotta when I make it.

Well, I habitually double recipes when I cook so we have leftovers for lunches. I know the base recipe is good, I make it a few times a year... it's just the kale that's new.

Kale in lasagna seems a travesty to me. Now hard boiled eggs slicked medium thickness and crumpled pecorino and small cubes of salami work very well.


and yes ricotta per favore di dio....

In all seriousness, yes. I'd stake my momma's rep as a cook on it. She's been making it that way for decades.

Cottage cheese is saltier and tangier. Gives the lasagna much more taste.

Plus, ricotta texture is just blech. It's just curdled milk. Not much is done to it.

My GF makes the best Lasagna. Double-decker, and it's about 4" tall. 1 piece is enough to fill you.

I googled 'kale in lasagna'. Apparently it's pretty common. Even Martha Stewart does it. :eek:
I like peppers, onions, tomatoes, mushrooms, garlic and spinach or swiss chard.

and ricotta cheese and mozzarella.

now that's a lasagna.

Yeah, I stood at the store looking back and forth at the kale and swiss chard and ended up grabbing the one that looked better. Their chard looked like it wasn't fresh enough. Can't wait for my garden to grow so I don't have to buy crap from the store.
