I'm wondering how much the yeast will affect the flavor. I'm not sure I'd like yeasty ginger ale.

You could probably use baking powder to give it some carbonation. If you use lemon juice, you could just use baking soda to produce the CO2.

BTW, this should have an alcohol content of ~0.5% when it's done. :awe:

Hey guys, I am about to make some ginger ale following this recipe:

It seems almost too simple, so can anyone recommend something else I should throw in the mix to spice it up a bit?

Sugar, ginger, water and yeast do make for a pretty good homemade ginger ale. I've done Alton Brown's recipe. I have been toying with adding a bit of cayenne pepper to give it a bit more bite though.

Update: It's fucking awesome!
I put in: 2 Tbsp of Ginger (run through a lemon zester)
3 Tbsp of Lemon juice
3/4 Cups of sugar
1/4 Tsp of Baker's yeast
and a pinch of Cinnamon and freshly-ground nutmeg.

I wonder if regular 'ol active dry yeast will work? i think it is the same as baker's yeast. I have a limitless supply!

Hmm, I actually have a limitless supply of brewer's yeast, too. I'm thinking it would be more tolerant to alcohol, if I add more and more sugar...

Bingo. That's what the recipe called for, and what I used.

Sweet, was waiting for the update.

I'm going to buy the ingredients on Friday, make some this weekend. I love root beer, so I may try that next week.

I do have ginger that needs to be zested soon, and lemons that need something done with them....

dang, I think I only need containers.

I saw that AB ginger ale a few weeks ago I've been meaning to do this since I have a hand of ginger that's been in my fridge for a long time.
