60fps should be attainable on 6950 crossfire 2560x1440 on high quality settings in most games, some games however will require a bit lower image quality, e.g. Metro2033, perhaps BF3 as well. Being able to play these very demanding titles on high settings and 60fps on 2560x1440 is going to cost a lot of money (e.g. 6990+6970), but if that's not an option, you just need to compromise in either image quality or fps.

Still worried about micro-stutter.

I get more frames running sli/crossfire, but it doesnt really matter if it stutters compared to 1 GPU.

Microstutter in a CFX/SLI config is certainly a concern. There's nothing wrong with getting a single GPU, but there is something wrong with getting a GTX 580 3GB when a GTX 570 has a substantial fraction of the performance (like 85%) at half the price.

Microstutter (in my own experiences) is usually found in the 45fps and below area. For most people it isnt even a problem (75% chance you wont notice it) If you are playing a game and getting 60fps you shouldnt have much of a problem at all. And if you cant get 60fps with two 6950's then just turn down the eye candy a bit

I decided to go with a 6990 and if i get microstutter, i can upgrade by adding a 6970 to the mix. Only this is, that will introduce some heat issues having all that running

I know i could get 6950 and probably flash them to 6970, but i dont want to deal with that, and i cant fit 3 cards in there. Good thing about 6990 is that its 2 cards in the same space as 1.

Should add that i'm not gonna buy a screen like that to enjoy my current new games in less than ultra (bf3)

Well, a 6990 isn't two 6970s, its GPUs are basically 6970 shader count running at 6950 clocks. So you could easily OC (not unlock) two 6950s to get to the same performance for a couple hundred bucks less. You would still be ahead even after factoring in the cost of a ridiculous mobo like the P8P67 WS Revo.
